We recommend you sear it on all sides on medium heat and then continue cooking on low heat for a couple of hours until it reaches the desired doneness. This piece provides an exceptional degree of tenderness and juiciness with a low fat content.
It’s the most sought after piece of the whole beef. It’s one of the leanest pieces but its tenderness is unmatched. You can cook it on the grill, oven or on an iron plate. We recommend grilling it over coal or firewood, searing the whole piece first and then continuing cooking over low heat.
